The Tonka bean is a nut fruit native to South America.
Also known as Coumarou, the Tonka bean is the fruit of Brazilian teak (Dipteryx Odorata).
Very aromatic, with black skin and cream-colored flesh, Tonka bean has a very particular taste, bitter, close to the raw cocoa bean.
To reduce to powder to flavor chocolates and desserts, yogurts, frangipanes, it also allows to flavor its sugar powder.
Finally, it also goes very well with seafood (scallops, langoustines), and elegantly raises an arranged rum.
